Changes in consumers' eating habits when choosing natural organic foods

Abstract

This theoretical essay sought to analyze consumer dietary changes and the determining factors in choosing foods, especially fresh organic foods. In summary, this essay presents important practical and theoretical contributions to the literature in advancing research on consumer behavior and dietary changes. In relation to practical contributions, consumers' perception of their concern with healthy eating, attributes linked to the promotion and improvement of health and characteristics linked to the environment are identified. Regarding theoretical contributions, the findings help readers understand how fresh organic foods are understood. It was also observed that the organic market is on the rise in developing countries, such as Brazil. The country is the largest organic consumer market in Latin America, where two in ten individuals consider themselves consumers of organic food, and at least five Brazilians consume some organic food at least three times a week. For future studies, research is suggested that seeks to better understand consumers' dietary changes and how informed they are about the nutritional benefits that fresh foods can have on their health.
